I’ve just got home from errands and just realized, it’s not even 1pm as I start this! It feels like it should be later.

I needed to go to the town north of us to pick up our beef share this morning, so I asked my daughter to do the morning rounds while I checked on the truck and stuff. The front tires were just low enough to be worth firing up the compressor and topping them up. It was -24C/-11F with a wind chill of -32C/-26F at the time, so I ran the engine for a while, too. I did have to shut it off while pumping one of the tires, though. The breeze was blowing the exhaust right into that corner of the garage!

I did help my daughter as she was feeding the outside cats, giving the isolation babies, their wet cat food treat. Eye Baby really wanted out this morning! Well, it’ll just be one more day. Tomorrow, we will be opening up the door and setting the entry box over the opening again, so cats can freely go in and out again.

I left quite early so that I could get other stuff done before meeting up in our usual spot to get our beef share. The general store out post office is in closes at noon today, so I figured I’d try the post office, first.

Zero mail, still. Not even junk mail. The back-to-work order came into effect yesterday, though. I expect rural communities are going to be pretty low on the priority list for getting deliveries.

So I picked up a sandwich (freshly made at our one restaurant, kitty corner across the street) and a drink for my breakfast, then headed north.

My first stop was the feed store, and to look for heated water bowls.

They did have small heated water bowls, which is what I was after, since the big ones stop working so quickly. The price was insane, though. The volume it holds is less than our small heated water bowls, but it cost as much as a large one. The quality, however, was noticeably better. With everywhere else being out of stock, I went ahead and got one, along with a couple more 40 pound bags of kibble.

For the beef share delivery, we always meet in a grocery store parking lot – the only grocery store in town – and I still had time, so I went in to do a bit of shopping. I didn’t need much, and the prices for most things are quite a bit higher, but they have a remarkable selection for such a rural store, so I took my time looking around to see if there was something else I wanted to get besides a carton of milk. 😄 I did end up getting some buttermilk, which I rarely do. I think it will be great for the next time we make cornbread.

That done, I didn’t have very long to wait in the truck before the lady arrived with my beef share. We could only do a 1/8th share this time, so it was just two boxes. The shares were smaller this year, as they butchered heifers this year instead of steers, so with our monthly payments, we actually ended up with a refund. I would like to do a quarter beef again, so I asked about the possibility of sending them payments starting in January.

She asked me to hold off on that. They need to figure out what they will be doing this year. They already had to switch to beef shares only, moving away from the individual cuts and freezer packs. The market price they would get for their beef is pretty good right now, so it doesn’t make sense for them to hold onto cattle through to the fall right now. Plus, with everything becoming more expensive in general, they are going to have to increase their price. Right now, with the beef shares, they are charging $6.50/pound hanging weight, and they’ll be losing money if they don’t adjust that. She won’t know until March or so, what direction they will be going. Once that’s worked out, she has a list of regular customers – including us – that they will contact directly. If we don’t find out until March, though, we’ll probably end up doing a 1/8th beef again, which she understands.

As we were talking, we shared some frustrations. For her, as someone who sells beef shares, she has a real problem with other ranchers that sell their shares at a fixed price, rather than by weight. You never know until you get the hanging weight, how much each share will actually work out to be. Which is how we ended up with a refund. You can’t just decide a whole beef will be X amount ahead of time, and then divide it by whatever share someone is getting. At least, not ethically! It makes things harder for ranchers like her, too, because people catch on that they’re not being charged fairly. I didn’t even know there were people selling beef shares with fixed prices. I’ve only see it done by weight.

So we shall see how things work out for them. Meanwhile, I’ll just set the payments I would be making to them aside. I would rather send it to them, to help feed the animal we will be eating, but that’s okay. And if they end up not doing beef shares next year, well, that’s just more in the savings account.

With my other errands done, it was straight home after picking up the beef. I pulled into the yard to unload, then gave the outside cats a small feeding to get them away from the truck so I could park it.

Once that was done, I empties the boxes into the freezer. With the extra shopping we’ve done for Christmas and New Years, there isn’t a lot of room! We couldn’t have fit a quarter beef in there, that’s for sure.

We got quite a few 2 pound packages of ground beef, a whole lot of steaks and several roasts, plus beef bones. Now that we have the Instant Pot, I’m thinking we could try using it to make bone broth – something with onions and garlic in it, so it’s for our own use only, not for the cats! I actually found some packages of bones, both beef and pork, while making space in the freezer. They’re starting to get freezer burned, so we should make some broth with them for the cats – and free up some freezer space!

Once that was put away, I took down the old extension cord that the fried out heated water bowl had been plugged into, and replaced it with the new one I picked up not long ago, then set up the new water bowl. There was still some liquid water in the fried out bowl, so I poured that into the new bowl. Remarkably, the water started getting slushy on top, rather quickly! I got the critter cam plugged in, too, and at first it didn’t work. The app told me the camera was offline. ?? I plugged things in and out a few times and it started working, so I don’t know quite what went wrong.

The new bowl has been accepted, though!

The old one, with nothing but ice in it, got set aside not far from there the heat lamp is. It might actually get warm enough to melt under there. As long as it doesn’t get in the way of the cats using the heat lamp, it can stay there.

I had lots of curious kitties while I was setting up the new extension cord!

I was done and tying off the outside doors again when I noticed there were three amigos at the window, watching me, so I decided to take their picture.

I ended up catching a bit of action!

So much for being amigos! 😄

Anyhow.

Everything is now brought in, put away and set up.

It’s been a productive day, and that makes me happy.

Beefy!

Check this out!

This year’s quarter beef filled 5 boxes this time. The finished weight for our share came out to 210 pounds (just over 95kg). They did have to increase their price per pound this year, so it was $6.25 per pound, instead of $6, making for a total of $1312.50 Our first order of a quarter beef was under $800, at $6/lb. 

I’m going to have to go over the budget and see if we can still make the $100 a month payments for another quarter beef at the end of this year, but with the new truck payment, and various things that need to be repaired or replaced, I’m not sure we’ll be able to do it. We can still get their freezer packs out of the regular budget, but would be paying more per pound that way. It’s only by getting at least a quarter beef share that we can get things like prime rib and big T-bone steaks at only $6.25 a pound. 

When letting them know more of less what kinds of cuts we wanted (we’re more interested in a nice variety, so I really don’t care that much), I mentioned we are a household of 4 adults, asking if it was at all possible to get items in groups of four. So, if one type of steak is normally packaged two together, to get two packages of that steak. They don’t do the butchering themselves, but send the beef to a provincially certified butcher, so I knew it wasn’t really up to them, and would depend on just how much our share worked out to be as it was being cut. The closest they could get would be satisfactory. I didn’t count the packages, but from the looks of things as I put them in the freezer, the butcher did try to do that! The minute steaks used to be smaller packages of two. This time, they were in larger packages of four. Some of the bigger steaks used to be one to a package, and we’d have two packages of one type, and two of another, so when we had a steak dinner for the four of us, we wouldn’t all have the same kind of steak. This time I saw them packed in pairs, and two packages of each type of steak. I’m quite pleased! 

The chest freezer is now quite full. I’ve got some minute steaks out for tonight, since they’ll thaw out more quickly, plus a 2 lb package of ground beef thawing out for tomorrow. I’ll be doing our Costco shopping tomorrow, and won’t need to buy any meat at all this time! My mother has been refusing to buy meat at the grocery store lately, because of the prices, and buying things like a ring of garlic sausage, instead. I think she’s still got a package of venison from my sister in her freezer, but I want to bring her some ground beef and something else that’s in a smaller package, since it’s just for one person. I think some stew meat might do well for her. I’ll try to remember to grab some and drop by her place on the way to the city to drop it off.

Oh, we got an extra little gift with our beef order this time, too – a pair of ball caps with their logo on it. I was quite happy to see them. I wear a cap all the time these days, and the one they gave us before with our very first order is starting to look a bit stained and beaten up! 😄 We got one black hat and one burgundy. My younger daughter loves the red one, and has been wearing it since they were brought inside!

I am so happy our beef is in – and that they were willing to delay our order, when the final weight turned out to be so much more than expected!

So good!

It occurred to me that I have yet to post a picture of what the Black Nebula carrots look like, cooked! So I thought I’d share this photo with you, while we still have some left.

My daughters did the mashed potatoes and ginger carrots. At the last minute, I cooked up four HUGE t-bones from our quarter beef order, and made a pan gravy. The steaks were so big, I could barely fit them in our largest pans. I was able to cook all of them at one time, though, and made the pan gravy while they rested.

I am so full right now!

As for the Black Nebula carrots, they are so dramatically dark! A very beautiful dish. As for flavour… they’re really not any different from any other carrot. They were sweet and tasty, but not outstanding in any way. I am glad we grew them. We had the most seeds for the Black Nebula, and they shared a bed with the Uzbek Golden carrots, in the main garden area. The Napoli and Kyoto Red carrots we grew along the chain link fence did not do well with how much flooding that area got, even being in a slightly raised bed. If we had not had carrots growing in two completely different areas, we would not have had enough to last us beyond a couple of meals. Something to keep in mind, when we grow carrots next year! I’d be willing to grow them again some day, but I want to try a few other types before we settle into one or two varieties.

As for the steak…

Changes in plans, and a little bit of everything

Yesterday, we got our quarter beef in!

We had to juggle a bit to be able to close the freezer lid. No, it’s not completely full of beef – there’s other stuff underneath – but I’d say over half the freezer is now packages of beef.

After I took the picture, I dug out a couple of packages of T-bone steaks to thaw out for today! It’s been soooo long since we’ve had a good steak!

I love how big the stew packages are this time. They’re not visible, but there’s also about two dozen 2 pound packages of ground beef in there.

Today’s plans, however, had already changed before I went to bed!

I got a call from my brother. He’d just talked to my mother, and he was asking if I could take her to the hospital today. !!! My mother thinks she’s got a UTI again (she is likely right), but she told my brother more than she told me, and it’s more of a problem than I knew. My guess is, she was hoping my brother would drop everything, drive all the way to her place, then take her to the hospital and sit with her, like he had done the last time this happened. She’s been suffering for more than a week, but had only just tried calling the community health number yesterday. She can’t handle the automated phone systems, so she just hit 0 and left a message. Twice. No response.

So today, my plan was to call our doctor’s clinic, which is in a town about 40-45 minutes drive from my place, as soon as it opened (after doing my rounds; head count of 27 this morning, and I couldn’t see the new bitty). I wanted to see if I could make arrangements with them, or see if I should take her to the hospital (our doctor’s clinic shares a building with the hospital).

Then I got a call from the home care worker that last assessed my mother. They got her messages from yesterday, and followed up. The person who normally answered the phone doesn’t work on Wednesdays. *sigh* My mother seemed confused about things, so he wanted to clear things up with me, but she had already told him about going to her doctor today.

One of the things my mother has been pushing to do is change doctors again. There aren’t full time doctors locally, which is why we now to go another town. Plus, the local doctor, who came in from the city once a week, was female, and my mother doesn’t like female doctors. Apparently, there is now a new doctor, though. He might even be there full time now, instead of coming in from the city. I’m not sure. Our doctor in the other town isn’t white, and my mother doesn’t like that about as much as she doesn’t like female doctors. Having a closer doctor would be better for her (but he’s Greek; not sure if that’s white enough for her), however there have been issues in the past with getting good care locally. The hospital just doesn’t have the resources. Whether she switches doctors or not, she won’t be happy. She’s convinced she has cancer or something, but the doctors are keeping it a secret from her.

Anyhow.

I called the clinic right after it opened, but the line was already busy, so I called my mom and told her what I was working on. She was already getting ready to leave! When I got through to the clinic, however, it turned out her doctor had an opening, so I was able to make an appointment for her this afternoon.

So I called my mother back and we worked out a plan. I’ll be heading over to her place early enough to have lunch (she requested Chinese food this time! 😁), and we wouldn’t be in any hurry about leaving. I will be using our van, as it’s better for winter road conditions, so we’ll have to remember to bring her little stool to help her get in and out.

Which means I’m going to be out for most of today.

Ah, well. At least it’s supposed to be a relatively mild day today. Things are supposed to get colder again tomorrow, and I’d rather not be driving my 91 yr old mother around in the cold! We still need to do at least one trip to the city for our monthly stocking up, but thanks to the trip I did manage to make – and the beef delivery! – plus our current state of supplies, there is no urgency on that.

I really like being well stocked. It takes a lot of pressure off. It wouldn’t be as big a deal if we were still living in the city, but it makes a huge difference living in the boonies, and winter is coming on!

In other things, I talked to the cat lady yesterday evening. She showed my pictures of the new bitty to a vet already. Given the size, they agree that it is younger than the other bitties. Once we are sure there are no siblings, she wants to take it in. Like the other cats, it probably already has upper respiratory issues, and being so young, they don’t expect it would survive the winter, either, even in the relative warmth and comfort of the heated cat shelter. The new bitty will join the other bitty. Things have changed there, too. He is not going to the lady that took the other two. Instead, he will be going to the cat lady’s cousin! He’ll be going to his new home after Christmas. Maybe, he’ll have a little orange buddy going with him? Wouldn’t that be cool! Also, she has managed to find homes for 6 cats she was fostering! She will have room for more, soon.

So we will continue to monitor and, if things go as I expect, we will have an orange bitty in the house tonight.

We shall see! It’s not like anything seems to be going to plan, today! 😄😄

A rare indulgence!

Have I mentioned just how glad I am we were able to get that quarter beef this winter?

Thanks to paying the same price per pound for the whole thing, regardless of cut, last night we got to enjoy a rare indulgence.

T-bone steak!

In our younger days, when it was just my husband and I, and we had fewer expenses, we would *gasp* go to restaurants and order things like steak. My husband would order a T-bone, but he didn’t like the bone, so he’d give it to me. That’s the best part! I would happily gnaw every last bit off the bone, much to his amusement.

I’m sure the other patrons were not to impressed. ;-)

That was a long time ago. When the BSE, or “mad cow disease”, crisis hit our cattle industry, restaurants stopped selling bone-in beef. Even grocery stores stopped selling any bone-in beef, though for a while, getting any beef at all was difficult. Today, restaurants, with few exceptions, still don’t sell bone in beef, and even grocery stores never returned to pre-BSE levels of inventory, and that happened back in… 2003? Quite a long time ago. What is available in grocery stores is so insanely expensive, we could never afford it.

Which means, we haven’t had a T-bone steak in decades, and I’ve never cooked one before in my life!

So there I was, with 4 beautiful steaks and not sure what to do with them!

Ideally, I would have grilled them, but it’s freezing out, and the BBQ is buried in snow. I decided to go with pan searing them (after seasoning them with only coarse salt and freshly ground pepper), then transferring them to a baking sheet to finish them in the oven, at 450F, to finish. What that was happening, I used the pan drippings to make a gravy.

They came out looking amazing!

They tasted amazing, too. Even though I ended up over cooking them. I probably could have skipped the oven part completely and just pan seared them.

Best of all, I got to gnaw on some delicious, delicious bones!

I’m thinking we really need to find a way to fit a half beef next year, instead of a quarter beef, because having cuts like this is just amazing. :-D

Where’s the beef? Here’s the beef!

Yay!!! We got our quarter beef in today!

It was awesome meeting the delivery in a parking lot, like we were doing some sort of drug deal. :-D

So, 125 pounds of packaged cuts, plus the extra breakfast sausages we picked up, fit into four boxes, which also fit perfectly into our little utility wagon.

One box was almost all beef bones. The plastic bag has the sausages. I’ve never made bone broth before, and I’m really looking forward to giving it a go!

One box had stew meat and different cuts of steaks.

It has been AGES since I’ve had a good steak!

A third box was all roasts and ribs, and the fourth was all ground beef.

We did have things in the freezer before putting this in, but right now, it’s mostly beef in there. I kept out a couple of packages of breakfast sausages to thaw out, and also took a prime rib roast for the fridge freezer. We’ll be having that for New Year’s.

I’ve never done prime rib before. It’s going to be awesome!

We won’t be getting a lot of frozen stuff when we do our big shop before Christmas – there’s hardly any room left!

We’re shooting to get a half pig for next fall. Which means that, unless we get a bigger or a second freezer, or start canning quite a lot of meat (which I plan to do), we won’t have room for more than a quarter beef as well. I’d like to get a half beef next time, though, so that is something we will keep in mind over the summer. My parents had two freezers; one just for meat, and one for everything else. It wouldn’t be a bad idea to have a second one, though we’ll have to figure out what we want to take out of the old kitchen to fit on. We’ve got seating in there right now, to enjoy in the summer, but didn’t really use it much.

We’ll figure it out.

For now, we are well stocked with enough beef to last us for a good while!
